Want to cook something lovely and healthy for Valentine's Day? Make a dish with tomatoes cooked in olive oil part of supper - bring out the protective properties of lycopene, an antioxidant that is found in processed tomatoes. Lycopene inhibits tumors, and is already well known in its prevention of prostate cancer, and may help guard against lung, pancreatic, and breast cancer. The antioxidants found in tomatoes hunt down and neutralize free radicals, thus preventing oxidative damage to your cells. Healthy cells have the most resistance to cancer.
